BEHIND PRODUCTION

This exceptional lot stands as a shining example of the dedication and expertise of the pioneering farmer's cooperative, COMSA (Café Organico Marcala SA), in Honduras. The coffee in this lot is a careful selection of cherries sourced from numerous COMSA member farms, all of whom adhere to the cooperative's stringent quality standards.

Producers at these farms employ meticulous selective picking, ensuring that only the ripest and most suitable cherries make their way to COMSA's central wet mill. Here, the coffee undergoes a second round of sorting and separation. The cherries are meticulously separated, first through visual inspection and then by cherry density, with the latter being determined through floating in basins and subsequent hydrolysis for 24 hours. After this rigorous process, the cherries are set out to dry on patios or raised beds.

The unique character of this coffee is accentuated by the natural processing method, as the cherries are sun-dried with their skin and mucilage intact for a duration of 12 to 24 days, depending on prevailing weather conditions. Once the cherries reach the optimal moisture content of 11.5% to 12%, they are stored as dry parchment until they are expertly prepared to meet Cima Café's exacting specifications or those of our esteemed Roaster Partners. This exceptional lot reflects the unwavering commitment to quality that defines COMSA and the unique terroir of the Marcala region in Honduras.

Our coffee is sourced from local cooperatives, where dedicated and passionate farmers meticulously tend to their coffee plants, employing sustainable and environmentally friendly practices.

These cooperatives represent a close-knit community committed to quality and fair trade, ensuring that every bean that finds its way to our roastery is grown with care and love for the craft. Honduras La Paz arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

Today COMSA has over 1.200 active members and are leaders in the Specialty and Organic sectors of Honduran Coffee Production. They are also a true cooperative organisation that supports and promotes their members’ innovative efforts, implement educational programs for members, have technical teams constantly out in the field, introduce novel recycling and sustainability protocols, and many more initiatives.

COMSA also runs an experimental farm called La Fortaleza where all members can try out and share ideas with other producers. The farm is much more than a coffee farm, and promotes the philosophy of COMSA’s organic vision that emphasises the “5 Ms”: (organic) Material, Microorganisms, Minerals, Molecules, and (grey) Matter. All five are essential to healthy soil and healthy producers!
